Join us for the grand reopening of Vermicular Restaurant THE FOUNDRY on Tuesday, December 3, 2024, at 11 am, as we celebrate 5 years of Vermicular Village!

New Concept: “Vermicular Meals that Nourish the Soul and Body”

We’re shifting from a set menu to a more flexible à la carte style, offering an all-day dining experience where you can enjoy Morning, Lunch, Cafe, and Dinner options whenever you like.

The menu has been thoughtfully reimagined to embrace this new concept. With a focus on wellness and flavor, we craft our own seasonings from scratch—including sauces, dressings, and fermented ingredients like miso and soy sauce koji. Each dish, prepared using Vermicular cookware and a specially designed wood-fired oven, is designed to intensify the inherent flavors of each ingredient, achieving a perfect balance of taste and nourishment.

The Vermicular Pot Made Bakery will also reopen under the same concept, “Vermicular Meals that Nourish the Soul and Body.”

Vermicular Restaurant THE FOUNDRY: Introducing Our New Menu

For Lunch:
Vermicular Set Meal  ¥2,860(Tax included)

Enjoy a carefully curated selection of seven side dishes to accompany rice made in the Vermicular RICEPOT. Savor tender, slow-cooked roast beef and salmon mi-cuit, alongside our signature soy sauce koji with raw egg served over rice. Presented in a Vermicular ohitsu, the rice stays perfectly warm, ensuring every grain is enjoyed at its best.

For Dinner:
Wood-Fired Cooking that Enhances Natural Flavors

Our exclusive Firewood Skillet, featuring our proprietary enamel coating for instant evaporation, is specifically developed for use in our custom wood-fired oven. This combination enhances the natural flavors of meats while infusing them with a rich, smoky aroma. This unique cooking method unlocks the full depth of every ingredient.

 

For Cafe:
Whole Wheat Pancakes with Caramelized Seasonal Fruits and Strawberry Confiture  ¥2,310 (Tax included)

These whole-wheat pancakes, cooked on the Vermicular griddle, are moist and fluffy, made without butter and topped with a light, creamy soy milk and coconut whipped cream. Paired with caramelized seasonal fruits, each visit offers a unique experience with flavors that change with the seasons.
